Cuisine of the North
In the North, the Pais Vasco (Basque Country), Asturias, Cantabria, Galicia, Aragon, La Rioja and Navarra areas contribute delightful flavors to world gastronomy. The familiar gastronomic fare of the Pais Vasco is based on potatoes, clams and centollo (spider crab). Pork, cheese and cider (apple wine) products are indigenous to Asturias. And if you prefer food from the sea and the mountains, such as anchovies and milk products, you must taste the flavors of Cantabria.
At Agua Ardiente, we also make use of the products of the earth. Fruits and vegetables, which are important staples of the Aragon, La Rioja and Navarra areas, are transformed into savory specialties by Chef Carlos Mendes’ . Asparagus, pimentos, pears, potatoes, the vegetable menestra, and tender salads appear in several of our dishes, demonstrating the tremendous diversity of the cuisine of the North.
